Moth Dal Curry brings together lentils and traditional Indian spices for a comforting, protein-packed meal. This affordable vegetarian dish is a healthy family favorite that fits into any calorie-conscious plan.
Heat 2 tbsp vegetable oil in a medium saucepan over medium heat. Add cumin seeds and sauté until fragrant, about 30 seconds.
Add chopped onion and cook on medium heat for 5–7 minutes, stirring occasionally, until onions turn golden brown.
Stir in minced ginger and garlic, cooking for 1 minute until aromatic, then add ground turmeric, ground coriander, and red chili powder. Sauté for another minute to bloom the spices.
Mix in chopped tomatoes and cook until they soften and begin to break down, about 4–5 minutes. Stir occasionally for even cooking.
Add soaked, drained moth beans and 3 cups of water. Bring to a boil over medium-high heat, then reduce heat to low. Cover and simmer for 35–40 minutes, or until beans are tender but not mushy.
Stir in salt, adjust seasoning if needed, and simmer uncovered for another 3–5 minutes to reach your desired consistency. Serve hot.
