Everything good about breakfast, wrapped in a tortilla. Sausage, eggs, maybe some cheese — this high protein burrito is grab-and-go fuel that keeps you full for hours.
Slice the green onions thinly and set aside; cut each cooked breakfast sausage link into small bite-size pieces.
In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
Heat a large nonstick skillet over medium heat; add olive oil and sauté the green onions for 1 minute until fragrant, then pour in the egg mixture.
Reduce heat to medium-low. Stir gently and continuously, cooking until eggs are just set but still creamy, about 3-4 minutes. Do not overcook.
Add sausage pieces to the eggs and fold in shredded cheddar cheese. Stir gently until cheese just melts, then remove from heat.
Warm the tortillas in a dry skillet over low heat or microwave for 10-15 seconds to make them pliable.
Divide the egg-sausage mixture among the 4 tortillas. Fold the bottom of each tortilla up over the filling, then fold in sides and roll tightly.
For a toasted finish, wipe out the skillet and heat over medium. Place the burritos seam side down, pressing lightly, and cook 1-2 minutes per side until golden and sealed.
