Chilled silken tofu is drizzled with fragrant scallion-infused oil and soy sauce for a refreshing dish. This vegetarian, protein-rich appetizer is ultra low calorie and perfect for hot weather family meals.
Gently drain the silken tofu and transfer to the refrigerator to chill for at least 1 hour.
Slice the scallions thinly and set aside.
Heat 1 tbsp neutral oil and 2 tbsp sesame oil in a small saucepan over medium-low, until shimmering but not smoking.
Add sliced scallions to the hot oil and sauté for 30 seconds, stirring constantly; remove from heat before scallions brown.
Pour fragrant scallion oil evenly over chilled tofu, then drizzle 2 tbsp soy sauce and serve immediately.
