Heat 2 tbsp vegetable oil in a large pot over medium-high heat. Add chopped onion and cook until softened, about 5 minutes, controlling heat to avoid browning.
Add minced garlic and diced poblano chiles. Sauté for 3-4 minutes, stirring often to prevent sticking.
Add boneless chicken thighs to the pot. Season with half of the salt and pepper. Sear chicken on both sides until lightly golden, about 4-5 minutes per side.
Pour in chicken broth and add fresh corn kernels. Bring to a boil, then reduce heat to low and simmer gently for 25 minutes, skimming any foam as needed.
Remove chicken, shred it with forks, and return to the pot. Whisk masa harina with 1 cup of warm water separately, then slowly pour the slurry into the simmering soup, stirring continuously to avoid lumps.
