Payasam is a creamy Indian rice pudding infused with cardamom, saffron, and topped with nuts. This beloved dessert is served at family celebrations, festivals, and religious occasions across India.
Rinse basmati rice thoroughly and soak in water for 20 minutes to ensure even cooking.
In a heavy-bottomed pot, bring whole milk to a gentle boil over medium heat, stirring occasionally to prevent sticking.
Drain rice and add to milk. Reduce heat to low and cook uncovered, stirring frequently, until the rice is tender and the mixture thickens (about 25–30 minutes).
Stir in sugar, cardamom powder, and saffron threads. Continue simmering on low heat for another 8–10 minutes, stirring to dissolve sugar and infuse flavors.
In a small skillet, heat clarified butter over medium-low. Toast cashews until golden and add raisins; cook until raisins are plump. Fold these into the payasam, reserving a few nuts for garnish.
Serve warm or chilled, garnished with reserved toasted nuts.
