Bayo beans mashed and fried in a small amount of oil until smooth and creamy. This vegetarian, protein-rich side dish is a healthy family staple across Mexico.
Heat a large nonstick skillet over medium heat and add the vegetable oil.
Sauté the chopped onion for 2-3 minutes until translucent, then stir in the minced garlic and cook for 1 additional minute, without browning.
Add the cooked bayo beans to the skillet and stir well, lowering the heat to medium-low. Reserve some bean liquid if available.
Use a potato masher to mash the beans to your desired consistency, adding small splashes of reserved bean liquid or water as needed for a creamy texture.
Continue cooking, stirring frequently, for 10-12 minutes until the beans are thick but still creamy. Season with salt and black pepper, and serve hot.
