Wrap each hot dog tightly with one slice of bacon, securing the ends if needed with toothpicks.
Heat a large skillet or griddle over medium heat. Add the bacon-wrapped hot dogs and cook, turning frequently, for 8–10 minutes until the bacon is crisp on all sides.
Warm the buns lightly either in the oven or on a skillet for 2–3 minutes, taking care they don’t dry out.
Heat the pinto beans in a small saucepan over low heat with a pinch of salt and black pepper until just hot – do not boil, so beans stay soft and creamy.
To assemble, add a spoonful of warm beans to each bun, place a bacon-wrapped hot dog on top, then layer with diced onion, tomato, avocado, jalapeño slices, and cilantro. Drizzle mayonnaise, mustard, and ketchup over each. Serve immediately.
