Savory stuffed mushrooms filled with herbed breadcrumbs and cheese are a vegetarian, family-favorite appetizer. These elegant, bite-sized treats are perfect for holiday entertaining.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Carefully remove the stems from the mushrooms, chopping stems finely and setting mushroom caps aside.
Heat 1 tbsp olive oil in a skillet over medium heat; sauté chopped mushroom stems and minced garlic for 3–4 minutes until softened.
In a bowl, combine sautéed stems and garlic with breadcrumbs, Parmesan, cream cheese, chopped parsley, salt, and black pepper. Mix until stuffing is evenly combined.
Brush mushroom caps with remaining olive oil, then fill each cap generously with the stuffing mixture, mounding slightly.
Arrange stuffed mushrooms on the prepared baking sheet and bake for 20–25 minutes, until the tops are golden and the mushrooms are tender.
Let cool for 5 minutes before serving for best flavor and texture.
