Sift chickpea flour and rice flour together into a large bowl for lump-free mixing.
Add ajwain seeds, turmeric powder, and salt to the flour mixture; mix well.
Melt unsalted butter, then pour it into the flour. Add water little by little and knead until the dough is soft but not sticky.
Grease the inside of a sev press or omapodi maker, then fill it with a portion of the dough.
Heat oil in a wide, heavy-bottomed pan over medium heat. When a pea-sized dough dropped in rises immediately, maintain medium heat—do not let it smoke.
Press the dough directly into the hot oil in circles, taking care not to overcrowd.
Fry each batch for 2–3 minutes, turning gently until golden and crisp but not browned. Drain onto paper towels.
Repeat with remaining dough, keeping oil at consistent temperature for even texture.
Cool the omapodi completely before gently breaking into pieces for serving or storage.
