Veg Kadhai is a wholesome Indian vegetable dish cooked with traditional spices and fresh ingredients. This healthy vegetarian preparation is a family staple that supports clean eats and balanced nutrition.
Heat 2 tbsp vegetable oil in a heavy-bottomed pan over medium heat. Add cumin seeds and let them splutter for 10 seconds.
Add sliced onions and sauté for 4–5 minutes until translucent, adjusting the heat to avoid browning.
Stir in ginger-garlic paste, then tomatoes; cook on medium-high heat for 5 minutes, stirring occasionally until tomatoes turn soft and start to break down.
Add turmeric, coriander powder, red chili powder, and salt. Sauté spices with the base for 1 minute until fragrant and oil begins to separate.
Add potatoes and carrots first. Mix well, cover, and cook for 5 minutes to ensure even cooking of denser vegetables.
Add cauliflower, green beans, and green peas. Stir gently, cover, and cook over low heat for another 8 minutes, checking and stirring once to prevent sticking or excess moisture loss.
Add mixed bell peppers and sprinkle kasuri methi and garam masala. Sauté uncovered on medium-high heat for 3 minutes to retain the color and crunch of peppers.
Taste and adjust seasoning if needed. Serve hot with naan, roti, or rice.
