Preheat a dry skillet over medium heat, add sesame seeds, and toast them for 4–6 minutes, stirring often until fragrant and lightly golden. Immediately transfer to a bowl to avoid burning.
Line a baking sheet with parchment paper and grease lightly. Prepare all ingredients before starting the caramel for efficiency.
In a heavy-bottomed saucepan, combine sugar, corn syrup, water, salt, and butter. Set over medium heat and stir just until the mixture melts; stop stirring once fully dissolved.
Increase heat to medium-high, attach a candy thermometer if possible, and cook until the mixture reaches 300°F (hard crack stage). If not using a thermometer, watch for deep golden color and rapid bubbling, about 10–12 minutes.
Remove from heat immediately, stir in toasted sesame seeds and vanilla extract swiftly, then pour the hot mixture onto the prepared baking sheet. Spread evenly with a spatula, working quickly to ensure a thin, even layer.
Allow to cool completely at room temperature, about 35–45 minutes, then break into bite-sized pieces and store in an airtight container.
