1. Pat the baby goat pieces dry and generously season all sides with salt, pepper, and oregano.
2. In a large Dutch oven, heat olive oil over medium-high until shimmering. Brown the goat pieces thoroughly on all sides (about 3–4 minutes per side), working in batches as needed.
3. Lower heat to medium, add chopped onion and smashed garlic cloves; sauté until fragrant and softened, about 6 minutes.
4. Pour in goat blood, stirring constantly as it begins to thicken; add bay leaves. Reduce heat to low and cover.
5. Simmer gently for 90 minutes, stirring every 20 minutes to prevent sticking and ensure the sauce coats the meat evenly. The sauce should be thick and glossy. Remove bay leaves and serve hot.
