Soft tacos filled with chicharrón simmered in green or red salsa. A comforting family breakfast taco that transforms humble pork rinds into a richly flavored, satisfying meal.
Roast tomatillos, serrano or jalapeño pepper, onion, and garlic in a dry skillet over medium heat until lightly charred, about 6–8 minutes.
Blend roasted vegetables with cilantro, salt, and black pepper to create a smooth salsa verde.
Heat vegetable oil in a skillet over medium heat. Pour in the salsa and simmer for 5 minutes, stirring occasionally.
Add chicharrón to the simmering salsa, reduce heat to low, and cook gently for 10 minutes until chicharrón softens but retains some bite.
Warm corn tortillas on a hot skillet for 30 seconds per side. Assemble tacos by filling each tortilla with the chicharrón guisado, serving immediately while hot.
