Simmer peeled chestnuts in whole milk on medium heat for 35–40 minutes until tender and nearly all the milk is absorbed.
Drain any excess liquid, then mash and purée chestnuts thoroughly while still warm for a smooth consistency.
Mix the chestnut purée with unsalted butter, granulated sugar, and vanilla extract. Stir until homogeneous and cool to room temperature.
Using a piping bag fitted with a spaghetti nozzle, pipe the chestnut mixture onto serving plates to form a mountain shape.
