Rice pudding perfumed with Mexican cinnamon is a traditional, warming dessert. This family-friendly classic is a creamy, sweet, aromatic treat for cold evenings.
Rinse the rice under cool water until the water runs clear to remove excess starch.
In a heavy-bottomed saucepan, bring 2 cups of water, the rice, and the cinnamon stick to a gentle boil over medium heat.
Reduce heat to low, cover, and simmer for 15 minutes, stirring once, until most water is absorbed and rice is just tender.
Add whole milk, sweetened condensed milk, salt, and raisins. Increase heat to medium-low and cook uncovered, stirring frequently to prevent sticking, for 20–25 minutes until thick and creamy.
Once desired consistency is reached, remove from heat. Take out the cinnamon stick, then stir in vanilla. Transfer to serving bowls, sprinkle with ground cinnamon, and serve warm or chilled.
