Classic American apple pie with a flaky golden crust and cinnamon-spiced filling is the quintessential family dessert. Nothing says home quite like a warm slice of fresh-baked apple pie.
Combine 2 1/2 cups flour and 1/2 tsp salt in a large bowl. Cut in 1 cup cold butter using a pastry cutter until the mixture resembles coarse crumbs.
Gradually stir in 6 tbsp ice water, 1 tablespoon at a time, mixing until dough just comes together. Divide dough in half, shape into two discs, wrap, and chill for at least 1 hour.
Preheat oven to 425°F (220°C). In a large bowl, toss the sliced apples with lemon juice, 3/4 cup sugar, 2 tsp cinnamon, and 1/4 tsp nutmeg until evenly coated.
On a floured surface, roll out one dough disc into a 12-inch circle. Fit it into a 9-inch pie pan. Add the apple filling, mounding slightly in the center.
Roll out the second dough disc and lay it over the apples. Trim overhang, pinch edges to seal, and cut a few slits in the top for steam to escape.
Optionally, brush crust with milk and sprinkle with sugar for extra shine. Bake at 425°F for 20 minutes, then reduce oven to 350°F (175°C) and bake for another 35–40 minutes until crust is golden and juices bubble.
Let pie cool for at least 2 hours to set the filling before slicing and serving.
