Rice water with cinnamon is a creamy, refreshing Mexican beverage similar to horchata. This vegetarian, fresh, family-friendly drink is a dairy-free, traditional refreshment option.
Rinse the rice thoroughly under cold water until the water runs clear, removing excess starch for a smoother texture.
In a large pitcher or bowl, combine 1 cup of rinsed rice, 4 cups of water, and 1 cinnamon stick. Cover and let soak at room temperature for at least 4 hours (or overnight for best flavor).
After soaking, remove the cinnamon stick and transfer the rice and soaking water to a blender. Blend on high for at least 2 minutes until the rice is finely ground and the mixture looks opaque.
Strain the blended mixture through a fine mesh sieve or cheesecloth into a large pitcher, discarding the rice solids for a silky drink.
Stir in 3 additional cups of water, 0.5 cup sugar, 1 tsp vanilla extract, and 0.25 tsp salt until dissolved. Chill well before serving over ice.
