Cook sushi rice according to package instructions and let it cool slightly; while warm, gently mix in rice vinegar for subtle tang.
Slice the Spam lengthwise into 6 even pieces for optimal thickness. Pat each slice dry to ensure proper caramelization.
Heat a skillet over medium heat. Sear the Spam slices on both sides, 2–3 minutes per side, until golden brown.
Combine soy sauce and sugar in the skillet, turning Spam slices to coat. Allow sauce to thicken and Spam to glaze—about 2 minutes, watching closely to prevent burning.
