Laal maas is Rajasthan's legendary fiery red meat curry made with mathania chilies and mustard oil. This intensely spiced, high protein dish is a must-try for carnivore enthusiasts and spice lovers.
Heat the mustard oil in a heavy-bottomed Dutch oven over medium-high heat until it begins to smoke; then reduce the heat and allow it to cool slightly. This step mellows the pungency of mustard oil.
Add the onions and sauté over medium heat until deeply golden and caramelized, about 12-15 minutes. Stir regularly to ensure even browning.
While the onions cook, soak the mathania chilies in hot water for 20 minutes, then blend with garlic and ginger into a smooth paste.
Add the chili-ginger-garlic paste to the onions. Fry the mixture over medium heat for 5-7 minutes until the raw aroma dissipates, stirring constantly to avoid scorching.
Add the lamb pieces and sear on high heat for 5 minutes, ensuring all sides are browned to lock in moisture.
Stir in yogurt, then add coriander seeds, cumin seeds, black peppercorns, cloves, cardamom, cinnamon, turmeric, and salt. Lower heat and cook, stirring, for 3 minutes to bloom the spices.
Pour in 2 cups hot water. Cover and simmer gently over low heat for 80-90 minutes, stirring every 15 minutes, until lamb is fork-tender and the oil separates on top.
Uncover in last 10 minutes to evaporate excess liquid if a thicker curry is desired. Taste and adjust salt before serving.
