Northern-style eggs scrambled with crunchy tortilla strips and salsa are a hearty breakfast. This high protein, family-friendly dish is a fresh, satisfying way to fuel your day.
Slice tortillas into strips (about 1/2-inch wide). In a large nonstick skillet, heat 2 tbsp vegetable oil over medium-high heat. Fry tortilla strips, turning occasionally, until golden and crispy—about 5 minutes. Remove and drain on paper towels.
Lower heat to medium. Add remaining 2 tbsp oil. Sauté diced onion and jalapeño until translucent and fragrant, about 3 minutes.
In a large bowl, whisk eggs with salt and black pepper until just combined. Pour eggs into skillet and allow edges to set, stirring gently.
Once eggs begin to softly scramble, fold in fried tortilla strips and gently mix to distribute them evenly for maximum crunch and texture.
Reduce heat to low. Sprinkle shredded cheddar cheese over the eggs. Cover skillet for 2 minutes to melt cheese, then uncover and spoon salsa evenly over the top. Serve immediately while hot and the tortillas are still crisp.
