Mild chayote slices are wok-fried with garlic for a light, refreshing vegetable side. This vegetarian, low calorie dish is fresh, healthy, and a subtle family dinner accompaniment.
Peel and thinly slice the chayote into half-moon pieces. Mince the garlic and finely chop the scallions.
Heat the wok over medium-high heat until just smoking, then add 1 tbsp vegetable oil.
Add the minced garlic and stir-fry for 15 seconds, just until fragrant—avoid browning.
Add the sliced chayote and stir-fry briskly for 3–4 minutes over high heat, keeping the pieces moving to prevent sticking.
Season with salt and pepper, then continue to stir-fry for another 2–3 minutes until the chayote turns crisp-tender and glossy.
Toss in the chopped scallions, stir quickly to combine, and immediately transfer to a serving plate to preserve the chayote’s vibrant color and texture.
