Tangy tamarind popsicles with a hint of chile are a beloved Mexican frozen treat. This fresh, family-friendly snack delivers an irresistible sweet-sour-spicy combination in every lick.
Combine seedless tamarind pulp and water in a saucepan over medium heat. Stir constantly until the tamarind softens and dissolves, about 5–7 minutes.
Remove from heat and strain the mixture through a fine-mesh sieve into a bowl, pressing to extract as much liquid as possible. Discard the solids.
While the liquid is still warm, add granulated sugar and salt. Stir until fully dissolved.
Let the tamarind mixture cool to room temperature, then stir in lime juice and chile powder for a spicy-sour finish.
Pour the mixture into popsicle molds, leaving a little room at the top for expansion. Insert sticks and freeze for at least 4 hours, or until completely solid.
To unmold, briefly run the outside of the popsicle mold under lukewarm water. Serve immediately for best refreshing texture.
