Cantonese barbecue pork is glazed in a sticky-sweet marinade of honey, hoisin, and five-spice, then roasted until caramelized. High in protein and bursting with smoky-sweet flavor, it's a versatile family meal component.
Cut pork shoulder into long strips, about 2 inches thick, for even glazing and cooking.
In a mixing bowl, combine honey, hoisin sauce, soy sauce, Shaoxing wine, five-spice powder, minced garlic, red food coloring, and white pepper. Whisk to make a smooth marinade.
Coat the pork strips thoroughly in the marinade, cover, and refrigerate for at least 6 hours or overnight for maximum flavor penetration.
Preheat oven to 400°F (200°C) and set a rack in the upper third. Line a sheet pan with foil and position a roasting rack above it. Place marinated pork strips on the rack, letting excess marinade drip off.
Roast pork for 20 minutes, then baste generously with remaining marinade. Reduce oven to 350°F (175°C) and continue roasting for 20 minutes more.
For caramelization, brush with a little extra honey, increase heat to broil, and broil 2–3 minutes, watching carefully to avoid burning.
Let the Char Siu pork rest 10 minutes before slicing to retain juices. Slice into thin pieces and serve warm or at room temperature.
