Sift the chickpea flour thoroughly to remove lumps and achieve a fine texture.
In a medium, heavy-bottomed pan, combine sugar and water. Heat over medium flame, stirring constantly, until sugar dissolves and syrup reaches one-string consistency (about 220°F).
Reduce heat to low. Gradually sprinkle the sifted chickpea flour into the simmering syrup, whisking continuously to prevent clumping.
Begin adding ghee in increments, stirring vigorously after each addition. Raise heat to medium and cook, ensuring the mixture absorbs ghee evenly while stirring constantly.
Continue stirring until the mixture turns golden, bubbly, and begins to leave the sides of the pan. Pour immediately into a greased tray, smooth the surface, and let it cool for 30–45 minutes. Cut into squares and serve.
