Preheat a skillet over medium-high heat; add olive oil just until shimmering.
Add the roma tomatoes, white onion, and garlic cloves to the skillet. Sear, turning occasionally, for 6–8 minutes until vegetables are softened and charred in spots.
Transfer the charred vegetables to a blender. Add chipotle peppers in adobo, lime juice, kosher salt, and black pepper.
Blend mixture in short pulses until smooth but still slightly textured; stop to scrape the sides and control consistency.
Taste and adjust seasoning if needed. Serve salsa at room temperature, or refrigerate for at least 1 hour to let flavors deepen.
