Heat the olive oil and 1 tbsp butter in a wide skillet over medium heat. Add finely diced onion and sauté until translucent, about 5 minutes, adjusting heat so onions do not brown.
Stir in the Arborio rice and cook for 2 minutes, stirring constantly until the grains are coated and start to turn opaque.
Pour in the Barolo wine, keeping heat at medium. Let it simmer, gently stirring, until wine is absorbed and the rice stains deep purple.
Begin adding the hot vegetable broth one ladle at a time. Stir frequently; only add more broth when the previous addition is nearly absorbed, maintaining a gentle simmer—not boiling.
After 18–20 minutes, when rice is creamy and just tender, remove from heat. Stir in remaining butter and Parmigiano-Reggiano; season with salt and black pepper. Serve immediately.
