Thin egg and scallion crepes are a crispy, protein-rich breakfast wrap. A fresh, family recipe perfect for healthy mornings and clean eats.
Crack the eggs into a large bowl and whisk until fully blended and slightly frothy.
Add the flour, water, salt, and black pepper to the eggs, whisking until a smooth, pourable batter forms with no lumps.
Stir the chopped scallions evenly into the batter just before cooking for freshness.
Heat a non-stick skillet over medium-high heat and lightly brush with neutral oil to prevent sticking.
Pour about 1/4 of the batter into the pan, tilting to coat the surface thinly; cook for 2 minutes until edges crisp, then carefully flip and cook the second side for 1–2 more minutes until golden.
Repeat with remaining batter, lightly oiling the pan between each crepe, and keep cooked crepes warm under a towel.
Serve crepes hot, either whole or rolled up, with optional fresh scallions for garnish.
