Cut the beef chuck into 1.5-inch cubes and pat dry with paper towels for optimal browning.
Heat a heavy pot over medium-high and add the sesame oil. Sear beef cubes on all sides until browned, 5–7 minutes; remove and set aside.
Lower heat to medium, add sliced onion and minced garlic. Sauté until fragrant and onions are translucent, about 3 minutes, scraping up fond.
Return beef to the pot. Add water, soy sauce, salt, and pepper. Bring to a boil, then reduce to a gentle simmer, skimming off any foam.
Add peeled, chopped daikon radish and simmer uncovered on low heat for 80–90 minutes, until radish and beef are tender and broth is rich.
Taste and adjust seasoning if needed. Stir in chopped scallions just before serving for freshness.
