Smooth taro paste cake with creamy, purple filling and delicate sweetness is a Cantonese favorite. A family recipe with fresh, earthy taro flavor.
Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan for even heat distribution.
Peel and cut the taro root into 1-inch cubes. Steam the taro for 25–30 minutes over medium-high heat until very tender but not mushy.
Mash the steamed taro in a large bowl while hot, then blend with unsalted butter and half the sugar until a smooth paste forms.
In a separate bowl, whisk together eggs, milk, remaining sugar, and vanilla extract until combined. Add the flour and salt, whisking until no lumps remain.
Fold the taro paste gently into the batter mixture to maintain a smooth, creamy texture. Pour into the prepared cake pan and tap to remove air bubbles.
Bake for 45–55 minutes, checking at 40 minutes with a toothpick for doneness. Surface should spring back lightly when touched.
Cool in the pan for 15 minutes before unmolding. Slice only after the cake reaches room temperature for a neat result.
