Northern Mexican-style chile con carne with chunks of beef in a rich dried chile sauce. This high protein, carnivore staple is a hearty family dish that predates the Tex-Mex version.
Remove stems and seeds from the dried ancho and guajillo chiles. Toast them in a dry skillet over medium heat for 2–3 minutes until fragrant but not burned.
Soak the toasted chiles in 2 cups of hot beef broth for 20 minutes to soften. Blend the chiles, broth, onion, and garlic until smooth.
Cut beef chuck into large chunks (about 1.5 inches). Season lightly with salt and pepper.
In a heavy Dutch oven, heat 2 tbsp oil over medium-high. Brown the beef pieces in batches, letting a deep crust form on all sides; transfer them out as browned.
Return all beef to the pot, add the chile puree and remaining cup of beef broth. Stir in ground cumin, dried oregano, salt, and black pepper. Bring to a boil, then reduce to low, cover, and simmer for 1.5–2 hours until beef is fork-tender and sauce thickens, stirring occasionally to prevent sticking.
Taste and adjust seasoning before serving. Serve hot with fresh tortillas, rice, or beans.
