Trim excess fat from pork shoulder and cut into large chunks for even cooking and flavor infusion.
In a heavy Dutch oven or slow cooker, add pork, salt, pepper, oregano, cumin, bay leaves, sliced onion, smashed garlic, and squeeze in juice from the orange, then throw in the orange halves for aroma.
Set heat to low for 4–5 hours (slow cooker: low, pot: barely a simmer). Halfway through, turn the meat to ensure even flavor and moisture distribution.
Once pork is fork-tender, remove orange halves and bay leaves. Shred pork in the pot with two forks while simmering for 10 minutes uncovered to let moisture reduce and surface browning begin.
