Heat the oil in a deep pan over medium heat; add mustard seeds and cumin seeds. Let them splutter for 30–45 seconds until aromatic.
Add finely chopped onion and sauté on medium-low heat for 4–5 minutes until golden brown, stirring occasionally to prevent burning.
Stir in the ginger and minced garlic, sauté for 1 minute, then add chopped tomato. Cook until the tomato softens and oil begins to separate, around 5–6 minutes.
Mix in turmeric powder, red chili powder, coriander powder, salt, and garam masala. Sauté for 1 minute on low heat to bloom the spices.
Add the mixed sprouted beans and 2 cups water to the pan. Stir well, cover, and simmer on low heat for 20–25 minutes, stirring every 6–7 minutes, until the beans are tender and the curry has thickened.
Uncover, adjust salt or spices to taste, and simmer uncovered for another 3–4 minutes to reach your preferred consistency. Serve hot, garnished with chopped cilantro if desired.
