Increase heat to medium-high and add beef sirloin. Sear for 4–5 minutes, letting it release its juices.
Stir in onion and garlic, sautéing for 2 minutes until fragrant and onions turn translucent.
Add chopped tomatillos, cumin, salt, and pepper. Cook for an additional 3 minutes to soften tomatillos.
Pour in chicken broth and lime juice, scraping up any browned bits. Reduce heat to low, cover, and simmer for 50 minutes.
Fold in cooked pinto beans and crisp bacon. Simmer uncovered for 10 minutes to meld flavors, stirring occasionally.
