Fluffy and nutritious, Podi Idli is a steamed South Indian preparation that's gentle on the stomach and rich in probiotics. This healthy vegetarian dish is ideal for bariatric, diabetic, and family-friendly meal plans.
Grease idli steaming plates lightly with a drop of sesame oil for ease of unmolding.
Pour idli batter into the molds, filling each about 3/4 full to allow room for fluffiness. Steam over medium-high heat for 10–12 minutes, then let sit for 2 minutes before unmolding.
Heat sesame oil in a small skillet over medium flame. Add mustard seeds and allow them to crackle, then add curry leaves and asafoetida for aromatics.
Slice the warm idlis into halves or quarters as desired. Place them in a large mixing bowl.
Sprinkle podi and salt over the cut idlis, then pour the seasoned oil mixture from the skillet on top. Gently toss the idlis with a soft spatula to coat evenly, ensuring the podi sticks to each piece without breaking the texture. Serve warm.
