Heat 2 tbsp olive oil in a large pot over medium flame; add cumin seeds and let them splutter for 10 seconds.
Add finely chopped onion and sauté on medium heat until golden brown, about 6–8 minutes.
Stir in minced garlic and ginger; sauté for 1 minute, then add chopped tomatoes and cook down over medium heat until soft and oil starts to release, about 6 minutes.
Sprinkle in coriander, turmeric, red chili powder, and salt; stir to coat, letting spices bloom for 1 minute.
Add drained kidney beans and 1/2 cup water; simmer gently for 10 minutes to let flavors meld.
Fold in chopped spinach, cover, and cook on low heat for 8–10 minutes until spinach is wilted and dark green.
Uncover, stir in garam masala; simmer uncovered for another 2–3 minutes, allowing curry to thicken to a rich, creamy texture.
Check seasoning, adjust salt if needed, and serve hot.
