Sattu Litti is a traditional Indian bread with authentic flavors and a satisfying texture. This versatile accompaniment is a family meal essential that pairs perfectly with curries and chutneys.
In a large bowl, combine whole wheat flour and 2 tbsp ghee. Add carom seeds and a pinch of salt. Slowly add water and knead to make a semi-stiff dough. Cover and let it rest for 20 minutes.
In a separate bowl, mix together sattu flour, finely chopped onion, ginger, green chili, lemon juice, nigella seeds, black salt, pickle masala, and 2 tbsp ghee until the filling feels slightly crumbly but holds its shape.
Divide the dough into 6-8 equal balls. Flatten each ball into a disc, keeping the edges thinner than the center.
Place a generous amount of sattu filling in the center of each disc. Carefully bring the edges together to seal the filling inside, then gently roll into a smooth ball.
Preheat the oven to 425°F. Arrange the littis on a baking tray lined with parchment. Bake for 20-25 minutes, turning once halfway, until golden and crisp. Brush each litti with remaining ghee immediately after baking and serve warm.
