Warm a large nonstick skillet over medium heat, add 1 tablespoon olive oil, and gently toast the corn tortillas for 1 minute per side until pliable and slightly golden. Set aside and keep warm.
In the same skillet, add remaining olive oil, onion, and jalapeño; sauté over medium heat for 2 minutes until softened. Add diced tomato, cumin, and half the salt, cooking 3–4 minutes to form a quick salsa. Transfer to a bowl.
Add black beans to the pan; stir over medium-low until heated through. Season with remaining salt and pepper. Keep beans warm over very low heat.
Wipe out the skillet if necessary, then fry eggs over medium heat to your preferred doneness (about 3 minutes for sunny-side up, covering pan for set whites but runny yolks).
To assemble, lay 2 tortillas on each plate, top with black beans, a layer of salsa, sprinkle of cheddar cheese, warm eggs, and finish with avocado slices and a generous sprinkle of cilantro.
