Chewy sweet potato noodles are stir-fried with pork and vegetables in a savory-spicy Sichuan sauce. This protein-rich, gluten-free family dish has a unique bouncy texture that's addictively satisfying.
Soak the sweet potato noodles in hot water for 20-25 minutes until softened but still chewy, then drain and rinse with cold water.
Heat 1 tbsp neutral oil in a large wok or skillet over medium-high heat. Add pork and sear, stirring, until just cooked through and lightly browned. Remove pork and set aside.
Add remaining oil. Stir-fry garlic, ginger, and scallions (white parts) for 30 seconds until fragrant, controlling heat to prevent burning.
Add carrots, bell pepper, and napa cabbage. Stir-fry for 3-4 minutes with high heat until vegetables begin to soften but remain crisp.
Return pork to the wok. Add drained noodles, soy sauce, chili bean paste, sesame oil, rice vinegar, sugar, and white pepper. Toss everything together for 2-3 minutes over high heat until noodles are glossy, evenly coated, and sauce is absorbed.
Immediately serve hot, garnished with scallion greens for a fresh finish.
