Lean pork congee is a silky, savory breakfast bowl with tender meat and ginger. A high protein, healthy family recipe perfect for calorie deficit and clean eats.
Rinse the rice under cold water until the water runs clear, then drain thoroughly.
Add the rinsed rice, 8 cups of water, and sliced ginger to a large pot. Bring to a boil over high heat.
Once boiling, reduce to a low simmer, stirring occasionally and skimming off any foam. Simmer for 30 minutes uncovered.
While congee simmers, cut lean pork loin into thin strips. Marinate with 1 tsp soy sauce and a pinch of salt for 10 minutes.
After 30 minutes, stir the marinated pork into the congee. Simmer gently for another 15–20 minutes until pork is just cooked and porridge is silky.
Turn off the heat. Stir in white pepper, remaining soy sauce, and adjust salt to taste. Drizzle with sesame oil.
Ladle the congee into bowls. Garnish with sliced green onions and extra ginger if desired. Serve steaming hot.
