Fluffy and nutritious, Ramasseri Idli is a steamed South Indian preparation that's gentle on the stomach and rich in probiotics. This healthy vegetarian dish is ideal for bariatric, diabetic, and family-friendly meal plans.
Rinse the parboiled rice and urad dal separately until the water runs mostly clear. Soak rice and poha together in water, and soak urad dal alone, each for 4 hours.
Drain and grind urad dal with minimal water until fluffy and smooth; maintain cool temperature to retain fermentation quality.
Grind the soaked rice and poha to a slightly coarse batter, add it to the urad dal batter, and mix thoroughly for uniform fermentation.
Add salt and cover the batter. Allow it to ferment in a warm place 8–12 hours, until bubbly and doubled in volume.
Once fermented, gently stir the batter. Grease idli plates, pour in batter, and steam on medium heat for 12–15 minutes. Let rest for 2 minutes before demolding for best fluffy texture.
