Pat salmon dry and rub evenly with Cajun seasoning, salt, and pepper.
Heat a large skillet over medium-high and add 2 tbsp olive oil; once hot, sear salmon fillets for 3–4 minutes per side until blackened and cooked through. Transfer to a plate and rest.
While salmon cooks, toss shredded cabbage, red onion, cilantro, lime juice, and remaining 1 tbsp olive oil in a mixing bowl; season lightly with salt and pepper.
Warm corn tortillas in a dry skillet over medium heat for 30 seconds per side until soft and slightly charred.
Gently flake salmon with a fork, layer onto tortillas, and top generously with slaw. Serve immediately.
