Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Quickly sear the duck strips until just browned, about 2 minutes per side, then transfer to a plate.
Add remaining oil to the pan, reduce heat slightly, and stir-fry ginger until aromatic but not browned (about 1 minute) to unlock its warming flavor, then add onions and bell pepper and stir-fry for another 2 minutes.
