Rajma masala is a hearty North Indian kidney bean curry in a thick, spiced tomato gravy. This high protein, high fiber vegetarian dish is perfect for family meals, meal prep, and freezer storage.
Heat the oil in a large heavy-bottomed pan over medium heat; add chopped onions and sauté for 7–8 minutes, stirring, until golden brown.
Add grated ginger and minced garlic. Sauté for 1–2 minutes until fragrant, making sure not to let the garlic brown.
Stir in chopped tomatoes, turmeric, cumin, coriander, and chili powder; cook over medium-high heat, mashing tomatoes with a spatula and reducing moisture until the mixture becomes a thick paste—about 8–10 minutes.
Add drained kidney beans, salt, and 1½ cups water. Mix well, bring to a boil, then lower the heat to a gentle simmer; cook uncovered for 25–30 minutes, stirring occasionally to let the beans absorb the flavors and the gravy thicken.
Sprinkle in garam masala and simmer uncovered for an additional 5 minutes, ensuring the masala blends evenly and the gravy reaches the desired thickness.
Turn off the heat, rest for 5 minutes. Stir in chopped cilantro just before serving for freshness.
