Round, sweet, and utterly irresistible, Til Ladoo is a traditional Indian confection cherished for generations. This festive treat is a must-have at family celebrations, Diwali, and special occasions.
Dry roast the white sesame seeds in a heavy-bottomed pan over medium heat, stirring constantly until golden and aromatic, about 4–5 minutes. Do not let them burn.
Transfer the roasted sesame seeds to a plate and allow them to cool slightly.
In the same pan, add ghee, then stir in jaggery over low heat. Melt the jaggery gently, stirring to avoid burning, until it forms a soft, bubbling syrup (230–235°F on a candy thermometer).
Add the roasted sesame seeds and cardamom powder to the jaggery syrup. Quickly mix all ingredients so the sesame is well coated and evenly distributed.
While the mixture is still warm but safe to touch, grease your hands with a little ghee and shape small portions into tight round balls (ladoos). Work quickly before the mixture sets.
Let the ladoos cool at room temperature until firm. Store them in an airtight container.
