Clean the whole duck thoroughly, remove any pin feathers, and pat dry with paper towels.
In a stockpot, fill with enough water to submerge the duck. Add scallions, ginger, star anise, cinnamon stick, Sichuan peppercorns, soy sauce, Shaoxing wine, brown sugar, and five-spice powder. Bring to a gentle simmer over medium-low heat and add duck. Simmer for 45 minutes, occasionally skimming any foam.
Carefully lift the duck from the broth and let it drain and cool. Pat dry fully to ensure crispy skin—this step is crucial.
Rub salt and ground black pepper evenly over the duck’s skin and let it air-dry, uncovered, in the refrigerator for at least 2 hours (or up to overnight).
Preheat oven to 425°F (220°C) with a rack set on a sheet pan. Brush or rub duck skin lightly with vegetable oil. Roast duck breast-side up for 25 minutes, then reduce oven to 350°F (175°C) and roast another 35 minutes until the skin is crackling and golden.
Let duck rest for 15 minutes before carving. Serve with sliced scallions and, if desired, additional soy sauce for dipping.
