Sukhi Moong Dal is a nourishing Indian lentil dish cooked with aromatic spices and a flavorful tempering. This high protein vegetarian staple is DASH-friendly, budget-conscious, and perfect for healthy family meals.
Rinse the yellow moong dal thoroughly under running water, then drain.
In a saucepan over medium heat, add the rinsed moong dal and 2 cups of water. Bring to a gentle boil, then simmer uncovered for 12–15 minutes, stirring occasionally to prevent sticking.
While the dal cooks, heat oil in a separate skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds until aromatic.
Add finely chopped onion, green chili, and sauté for 2–3 minutes until the onion turns translucent. Stir in tomatoes and cook until softened, about 2 more minutes.
Add turmeric powder, red chili powder, and salt to the skillet. Mix well, then add this tempering to the cooked dal. Stir, cook together for 3–5 minutes on low heat to blend flavors, adjusting moisture for a dry yet moist consistency. Garnish with fresh cilantro before serving.
