Minced pork is mixed with salted duck egg and steamed into a savory, custard-like patty over rice. This simple Cantonese family comfort food is rich in protein and effortlessly satisfying for weeknight meals.
Finely mince the scallion and water chestnuts, ensuring the chestnuts are evenly diced to maintain a consistent bite.
In a large bowl, combine ground pork, chopped scallions, water chestnuts, soy sauce, white pepper, sesame oil, cornstarch, and sugar. Mix vigorously in one direction for 2-3 minutes until the mixture is sticky and cohesive.
Crack the salted duck egg. Separate the yolk and white; mix the white into the pork mixture, reserving the yolk.
Transfer the pork mixture into a shallow heatproof dish, spreading evenly to about 1-inch thickness. Gently press the reserved salted egg yolk in the center.
Place the dish in a preheated steamer over boiling water. Cover and steam on medium-high heat for 25 minutes. Let rest for 3 minutes with the lid off before serving to allow excess moisture to escape.
