Ukadiche Modak is a traditional Indian sweet that embodies the rich confectionery heritage of the subcontinent. This beloved dessert is a family favorite at festivals, weddings, and celebrations.
In a deep pan over medium heat, bring 1.25 cups water, 1 teaspoon ghee, and a pinch of salt just to a boil.
Reduce heat to low, add rice flour slowly, and stir briskly to avoid lumps; cover and steam for 3 minutes.
In a separate pan, mix coconut and jaggery over medium heat and cook, stirring, for 5–7 minutes until the mixture thickens and the jaggery dissolves. Stir in cardamom; let cool.
Knead warm rice dough for 3–4 minutes with wet hands and a touch of ghee until very smooth and soft.
Divide dough into balls. Flatten each, shaping into a cup, fill with cooled coconut-jaggery mixture, and gather edges to form the classic modak shape, pinching at the top.
Steam prepared modaks in a greased steamer basket lined with banana leaf or parchment, over medium heat for 10–12 minutes, until the surface becomes slightly shiny and non-sticky.
Let the modaks rest for a couple of minutes before serving warm with a dab of ghee.
