Sheer Khurma is a traditional Indian sweet that embodies the rich confectionery heritage of the subcontinent. This beloved dessert is a family favorite at festivals, weddings, and celebrations.
Heat a heavy-bottomed pot over medium heat and add the ghee; when warm, toast the chopped almonds, cashews, and pistachios for 1–2 minutes until light golden.
Add vermicelli noodles to the pot and roast on medium-low heat, stirring constantly, until the noodles turn light brown and aromatic, about 2–3 minutes.
Pour in the whole milk slowly, raising the heat to medium-high; bring to a gentle boil, stirring often to prevent sticking.
Lower the heat to a soft simmer; add chopped dates and raisins, then cook for 20–25 minutes, stirring every few minutes until the vermicelli softens and the milk thickens.
Stir in sugar, ground cardamom, saffron threads, and rose water; simmer for an additional 5–7 minutes, adjusting consistency with extra milk as needed. Remove from heat and let rest 5 minutes before serving.
