Vadai Snack is an iconic Indian snack that delivers satisfying crunch and authentic spiced flavors. This vegetarian treat is a family favorite that's perfect for tea time and casual entertaining.
Rinse the split black gram (urad dal) thoroughly, then soak it in water for 2 hours.
Drain the soaked dal well and grind it into a thick, slightly coarse paste, adding no extra water to retain structure.
Transfer the dal paste into a mixing bowl. Add finely chopped onion, green chili, ginger, curry leaves, salt, black pepper, and asafoetida. Mix evenly for light aeration.
Heat oil in a deep pan over medium-high until it reaches 350°F (175°C). Wet your hands, take lemon-sized balls of the batter, press gently into flat rounds, and create a small hole in the center.
Slide the patties carefully into the hot oil. Fry in batches, turning occasionally, until each side is golden and crisp (about 3–4 minutes per batch). Drain on paper towels before serving.
